Still Austin Whiskey Co. Hosts Full Circle Dinner: A Farm-to-Still-to-Farm Carne Asada Experience
Austin, TX – Still Austin Whiskey Co., known for its commitment to sustainability and its unique farm-to-still-to-farm cycle, is set to host a remarkable culinary event: the Full Circle Dinner. This exclusive carne asada cookout will take place at Still Austin Whiskey Co.’s distillery on October 17th, and features a locally sourced, sustainable menu paired with live music from the renowned Austin band, The Tiarras.
The Full Circle Dinner showcases the heart of Still Austin’s sustainable practices, including their use of 100% Texas-grown grains and partnerships with local farms. After distillation, the distillery sends its spent grains to Double J Ranch, where they nourish free-roaming livestock. This evening’s star course will feature beef from a whole steer raised on those very grains, cooked to perfection by legendary pitmaster Arnie "ArnieTex" Segovia.
A One-of-a-Kind Culinary Experience
Guests will enjoy a 4-course dinner curated by Chef Steven Lopez of San Antonio and ArnieTex, featuring a variety of Texas beef dishes. Each course will be paired with a signature ArnieTex cocktail crafted with Still Austin Whiskey.
Event Menu:
First Course: Sope de Chicharrón de Bistek – Fried corn cakes topped with beef tallow refried beans, crispy fried steak chunks, charred avocado, and salsa macha.
Second Course: Smoked Barbacoa Tetela – A masa pocket filled with queso Oaxaca, topped with slow-cooked shredded beef, pickled red onions, salsa, and lime.
Third Course: Still Austin Bourbon Beef Fajita Taco – Mesquite-grilled skirt, sirloin, and hangar steak, basted with Still Austin Bourbon and served with pico de gallo.
Dessert: Pecan-Pepita Pie Bar – A twist on the classic pecan pie, topped with Still Austin Bourbon caramel sauce, chantilly cream, and chocolate pearls.
